- Partial mash the grains (40 min at 150 degrees)
- Prime with 1 cup of dry dark malt.

Notes:
Opened at Dark Lord Day 2009, this beer has some aging to do. This is actually a second brewing, the first done by Old-Growth Ales, which was brewed without a recipe. Greg put together a recipe as best he could remember so we expect good things from this beer. It was requested by members of Hentai-Brau as their wedding beer, hence the second brewing. Being our 20th brew as Hentai-Brau it's very fitting that it's also labeled as our first for The Mystic Brewers of The Inebriati. -Holly

7 lbs Munton’s dry pilsner malt extract
8 oz 6-row pale malt
8 oz chocolate malt
8 oz wheat malt
4 oz rauche malt
1 oz cascade hops (60 minute boil)
1 oz cascade hops (5 minute boil)
5 oz fresh cut white-pine sprigs
1 oz oak chips (medium toast)
White Labs California Ale yeast
-Partial mash the grains (40 min at 150 degrees)
-Half of the pine sprigs are added with 5 minutes before flame-out.
-Make a tincture of the oak chips and half of the pine sprigs in 4 oz vodka. Add this to the secondary.
-Prime with 1 cup of dry pilsner malt

-Partial mash the grains (40 min at 150 degrees)
-Half of chamomile and orange peel is added to wort 5 minutes before flame-out.
-The remainder of the chamomile and orange peel is soaked in 4 oz of vodka (2 weeks) and added to secondary.
-Prime with 1 cup of dry pilsner malt.

Notes:
Finally the label number and actual brew number line up. Rob says it's pure accident but I still count it as a victory. This was opened at Dark Lord Day 2009 and this was the first time I could taste the intended flavors upon opening. Still rather light at this point, it will be interesting to see how the flavors develop. -Holly

Notes:
A dry, effervescent brown ale that is complex at first, but ultimately, very easy drinking. The nose has hints of caramel, raisins and oak – all produced by the specialty Belgian yeast strain. The mouthfeel is lighter than the scents would suggest and the color has the golden-orange tones of autumn. There are notes of vanilla and cloves and finally a hazelnut-like nuttiness to round out the pallet. There might even be a flavor of chocolate buried in there, but that's still up to debate and aging. -Greg

A moderately-malty brew based on the classic German wheat beers. We have added strawberries and whole vanilla beans to build a creamy-fruit character.

Notes:
Upon opening at Dave's wedding I wasn't too impressed. Nothing special about this hefeweizen though it was drinkable. Opened again at Dark Lord Day 2009 and I found it very drinkable with the strawberry and vanilla flavors easily apparent. It's become clear that our beers really come into their own given time to age. -Holly

I was also told by one attendee that they enjoyed this beer more than the Vanilla Dark Lord. Hopefully we can age this a little longer but it's so tasty we have a hard time keeping our hands off them. -Holly

Notes:
1 month: A bit harsh, with strong grapefruit flavors – a bit astringent. Odor is quite nice, however – rich and full with a very fruity, citrus scent. -Greg

3 months: A nice, vanilla scent has begun to peak. The citrus notes have mellowed well. There is a faint sweetness in the scent as well. Good mouthfeel, somewhat thick and chewy. Bubbles explode on the pallet. Orange flavors are in the fore when chilled. As the beer warms, it is apparent that much of the astringency is gone. High alcohol is not obvious. -Greg

A very exciting beer for us as it used some of our homegrown hops. Originally it had a very fruity scent but was very hoppy. Rob and our other non-IPA drinkers were quite disappointed. A year and a half later the hoppy flavor gave away to a light citrus taste, declared extremely drinkable by all. -Holly

4 months after brewing: The spices are beginning to meld and mellow somewhat. It is now possible to begin picking out the individual flavors. A really nice vanilla note has showed up, although cinnamon is still a bit of a bully. Cold storage is helping immensely. -Greg
